These are delicious.
They are not your typical baked cookie but they got my husbands approval, and that’s saying something! They are moist, super quick to make and couldn’t be any easier. Just throw everything in the food processor, mix, roll into balls, refrigerate for 30 minutes and that’s it! These are unlike regular, sugar-laden, over-processed cookies that offer nothing beneficial to your health and will cause your blood sugar to crash. You can even eat these for breakfast, or as a mid-afternoon snack that will keep you energized throughout the rest of your day. Craving something sweet after dinner? Enter RAW COOKIES. Instead of your typical after-binging-on-cookies-guilt, you can feel good about eating these raw cookies! Here’s what’s inside them:
Oats- This whole grain contains protective phytochemicals and an important type of soluable fiber known as beta-glucan, which lowers cholesterol, stabilizes blood sugar and provides healthy heart benefits.
Almonds- High in protein and fiber, full of healthy fats. Also contains many essential nutrients like vitamin E, vitamin B6, copper, magnesium and manganese.
Dates- These intensely sweet fruits are packed with concentrated sources of essential nutrients, vitamins, and minerals that are required for normal growth, development and overall well-being. High in fiber, iron, potassium, manganese, copper, vitamin A, magnesium, calcium, B vitamins and protective flavonoids.
Raw Cacao- Not to be confused with the highly processed “cocoa powder”, this superfood is extremely high in polyphenols called flavonoids, that have extraordinary antioxidant power. Also high in the essential fat oleic acid, which is a monounsaturated fat needed for heart health. Can lower blood pressure, improve circulation, improve digestion, fight disease, enhance physical and mental well-being and lower LDL cholesterol.
- 3/4 cup oats
- 1 cup raw almonds
- 1/2 cup dates
- 1 tbsp raw cacao powder
- 1 tsp vanilla extract
- 1/4 cup water
- 3-4 drops liquid stevia
- Combine the oats and almonds in a food processor and blend until it is in coarse crumbles. Add the rest of the ingredients and blend until mixture pulls together in a ball. Roll into 12 equal sized balls and refrigerate on a parchment paper lined plate until firm. (About 30 Minutes.) YUM!
